Sushi evolved from street snack to gourmet phenomenon
Sushi started as a poor man’s food, as farmers pickled fish with rice to avoid wastage. Today the business of Sushi is worth $22bn in USA alone.
Life of Sushi began 200 years ago in the region of modern day Laos, Thailand and Vietnam. The fish were gutted, rubbed with salt and placed in a barrel to dry for a few weeks. Whenever there was a need, the barrel could then be opened, the rice scraped off and the remaining fish eaten.Sushi travelled to Japan in 718 century BC. It underwent changes such as eating fish without fermentation or eating raw fish. People kept innovating to grow the industry.
As per History Today: Revulsion was, however, to prove a spur to innovation. During the early Muromachi period (1338–1573), steps were taken to make sushi more palatable. Rather than leave the fish in barrels for months — or even years — at a time, the fermentation process was reduced to a few weeks. This meant that less acid was allowed to form and the stench was kept to a minimum.
If we focus on developing our street food as Japan developed Sushi, we will also create great businesses. Haldiram’s is a great example of taking street food and turning it into $3bn empire. India awaits hundreds such stories.
