Online food delivery will revive the restaurant industry. Dark kitchens will help them survive during the pandemic. Restaurants reported 30% increase in the business by partnering with online aggregators.
If restaurants adopt dark kitchen model, they can ward off the danger of lack of customers. 40% of the stand alone restaurants will shut down. Dark kitchen model allows restaurants to use the brand equity to attract the past and prospective customers. Dark kitchens involve less capital expenditure and better bottom line. Little Bite Foods plans to open 36 cloud kitchens.
As per Indian Express: “…it has the potential to recover faster than any other business, over the next six months to a year. The entire delivery market is only running at 50 per cent of its capacity, so the volumes are low. But the silver lining is that it is on and it will recover quickly.”
Indian food tech market will be worth $8bn. Restaurants should not shy away from running cloud kitchens in the short term. It will not just keep the brand alive, it will bring in the cash.
