In 1880 Japanese people settled down in Portland, USA.
In 1911 Ota Tofu took birth. Ota produces the blocks of tofu from open vats of soymilk cooked over gas-fired brick ovens.
Owners made Tofu till 1948, when the second world war started. They came back, and restarted the business.
Why is it different?
They make tofu with hands. They produce three tons of tofu per week.
Process starts the night before.
At 4:30am spoked soya beans are ground and strained to get the milk.
Then they coagulate the milk to make curd.
Then workers press the curd in the cheesecloth to make firm tofus.
Will it survive?
“It’s important to keep technique — the way we’re making tofu,” Eileen said. “But if people don’t care about what they eat, then it doesn’t matter anymore… The way that we make tofu is going to go away unless somebody does it.”
